Grilled Lamb & Black Pudding Skewers

Ingredients

Skewers

Salad

  • 20 g parsley leaves
  • 1/2 red onion sliced
  • 2 tbsp capers
  • 75 g feta cheese crumbled
  • 100 g cherry tomatoes chopped in half

Salad Dressing

  • 1 tsp oregano
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt
  • pepper

Instructions

Skewers

  • Mix black pudding, lamb & salt and pepper together and roll into 75g balls
  • Shape black pudding balls into sausages and place on skewer (2 – 3 per skewer) & brush with olive oil
  •  Set BBQ to a medium – high heat and grill skewers for 7 – 8 minutes, turning every 2 minutes

Salad

  • Mix all salad dressing ingredients together and whisk until mixture thickens slightly
  • Mix all salad ingredients together and toss with salad dressing

Notes

Essential Tools

• chopping board
• sharp knives
• BBQ skewers
• BBQ (or grill pan)
• mixing bowl
• tongs
• whisk or fork

Tips/Tricks

• you can use a grill pan or frying pan if a BBQ isn’t available or weather doesn’t permit
• it’s easiest to roll the meat into balls and form the sausages on the skewers. I found that it clings better to the skewer that way
• alternatively you can make them into little patties and fry them if skewers aren’t available
