Grilled Lamb & Black Pudding Skewers

Salad 20 g parsley leaves 1/2 red onion sliced 2 tbsp capers 75 g feta cheese crumbled 100 g cherry tomatoes chopped in half Salad Dressing 1 tsp oregano 2 tbsp olive oil 2 tbsp lemon juice salt pepper
Skewers Mix black pudding, lamb & salt and pepper together and roll into 75g balls
Shape black pudding balls into sausages and place on skewer (2 – 3 per skewer) & brush with olive oil
Set BBQ to a medium – high heat and grill skewers for 7 – 8 minutes, turning every 2 minutes

Tips/Tricks
• you can use a grill pan or frying pan if a BBQ isn’t available or weather doesn’t permit • it’s easiest to roll the meat into balls and form the sausages on the skewers. I found that it clings better to the skewer that way • alternatively you can make them into little patties and fry them if skewers aren’t available
